I love to bake pastry, bread and cookies. I guess they are all things using dough? It may take many months and daily attempts to get something "right”. That’s the goal. When these attempts are shared with others they just see and taste something delicious. When they taste an artisan panettone they aren’t interested to know the many days it takes to create- all they really know is how other worldly it is.

I’ve been baking for 60 years. I grew up baking with my mother at home and with my cousin during the summers I spent on their farm in MN. I read a lot of cookbooks and of course, I watched Julia Child. I love that there’s always more to learn. I see something online or in a book and dive deep. The space where you begin to own the recipe and you can listen to your instincts is the prize. The process has taught me an awful lot about myself over the years. A delicious classroom!

I’ve been thinking of starting a micro bakery. I would also love to spend more time teaching kids - something I’ve been doing for a while but it always meant a long commute and bringing everything with me . It’s very satisfying to see the kids smiles and pride when their croissant comes out of the oven. It would be nice to have a kitchen more suited to teaching.
