What is your signature bake?

I love baking everything and anything but probably have the most fun with yeasty doughs. Making a dough, having it come together by adding flour, water, yeast, sugar, and butter/oil amazes me every time, as if it is the first time. Kneading the dough, feeling it stretch or rise is exciting. Making yeasty delicious creations by adding Nutella, vanilla, apples &cinnamon or savory treats with cheeses, vegetables, spices arises all our senses and probably why I love it so much.

How long have you been baking?

The first memory I have baking was when I was 5 years old. My mother was napping, my dad working and my older sister reading a book. I went into the kitchen and mixed everything I love- coconut, eggs, sugar, oatmeal and cinnamon, turned on the oven, shaped my little sweet balls and baked them. When they were ready, I placed them on a plate and woke my mom up. Her smile as she tasted my creation was everything I had hoped for, and the beginning of a sense of happiness baking gives me ever since.

What is your best baking secret?

I would say 2 secrets- first is don't be scared of yeast! Many fear working with yeast and think they are very sensitive, but I find them resilient and super fun, so I always encourage bakers to work with yeast. Secondly, anything can happen in the kitchen. Baking is messy and sometimes a total failure, but even if your end result is not what you wanted, you should never give up! Try again, tweak, change and dare to succeed.
